Soup 1 serves 2

Ingredients £0.25

½ Onion finely diced
1 tblsp Pearl barley
1 tblsp Split peas
¼ pt water
1 ½ pt of stock
1 tblsp Red lentils
1 potato diced small
1 carrot diced small
Or other vegetable of choice finely diced
Meat from carcase that made the stock (optional)

Home made stock which isn’t hard to make (see under stock).

1. Put the pearl barley, spilt peas and water in a pan, cover and cook for 5-7 minutes making sure the pan does not run dry. If it looks like it is beginning to go dry or catch add a little more water.

2. Once they begin to soften add stock and a handful of red lentils after a further 10 minutes add finely diced vegetables and meat if adding and cook for a further few minutes until the vegetables are cooked through. Serve in suitable bowls with toasties, a sandwich or chunks of bread.
