Roast Vegetable Soup

Left over roast vegetables

Hot Stock

1. Heat the vegetables in the hot stock.

2. Blitz in a food processor/blender or with a stick blender, the warm vegetables and enough hot stock to produce a thick smooth vegetable soup, ensure when using a blender that it is not to full to and does not explode out of the top. If you don’t have a food processor or blender of any kind you can mash the vegetable but it is unlikely you will get a smooth soup.
