Slow cooker rice pudding

I’ve tried making this with skimmed milk and even semi skimmed although possible there is no substitute for the full fat version in my book. I have reduced the sugar content from my original recipe and even make it with sweetener to taste and no sugar.

The addition of vanilla extract is also delicious or more traditionally a little nutmeg but when trying to keep the cost down they are two things that can in fact be missed out with out impairing the integrity of the pudding.

Ingredients £1.13

25g butter

100g rice

50g sugar

1 ltr full fat milk

1. Grease the Crockpot with all the butter. Add the rice and the sugar and stir together pour in the milk and stir again. Switch on high for 4 hours or low for 6 hours.

2. If the pudding is too thick add a little more full fat milk or cream. If the pudding isn’t thick enough leave on low for a further hour or so until thick enough. And serve on it’s own or with berries, or jam.
