250g floury potatoes cooked and mashed
3 spring onions finely chopped
400g crab meat mixture of brown and white or just white
½ lemon juice
1 tblsp chilli flakes
Black pepper
1 egg yolk
Plain flour for shaping and dusting
Oil for frying
Method
1. Mix the potatoes, spring onion and crab meat in a bowl with the lemon juice and chilli flakes and season with black pepper.
2. Use the egg yolk to combine the whole mixture. And shape into 8 patties on a floured bench and then toss the patties in the flour to coat.
3. Cook in shallow oil till browned on all sides and serve with potato wedges.
