Cheesy Chilli Bubble and Squeak & Crispy Onion Rings

I like potato cakes and I like bubble and squeak. I wanted some bubble and squeak to take centre stage as part of a vegetarian meal made out of mainly left overs. I find bubble and squeak is a little sloppy sometimes so I thought about how I could make it more solid so I added the flour to hold then together more and then added the chilli and cheese to give them a little more flavour and yet keep the cost down. The Onion rings are an old favourite light and crispy that can add texture to many meals.

Ingredients £0.95


½ small Onion
10 oz Potato mashed

2 tblsp Plain flour
3 Peppadew Chillies finely chopped

4 oz Cooked cabbage

1 tblsp olive oil

1 oz cheddar cheese grated


Method

1. Finely slice the onion and soften until beginning to turn brown at the edges.

2. Mix the flour into the mashed potato and add the onion and chilli. Shred the cabbage and mix this in as well.


3. Divide into 6 equal parts and shape into small patties.


4. Put the oil in a frying pan and fry for approximately 5 minutes until golden on both sides, turning half way through.


5. Sprinkle a little cheese on top of each patty put under a hot grill until the cheese is golden and bubbling.



Crispy Onion Rings

Ingredients £0.34

½ medium Onion

3 tblsp buttermilk

Freshly ground black pepper

2 tblsp Plain flour

3 tblsp Polenta



Method

1. Slice the onion and separate the rings place in a bowl with the buttermilk (Yoghurt can be substituted for buttermilk). Leave to marinade for at least 2 hours.



2. Mix the flour, polenta and pepper in a dish and then take each onion ring without removing the buttermilk dip into the flour & polenta mixture to coat each ring. Fry either in a deep fat fryer or in a frying pan with a generous amount of oil fry for only a minute or two until golden.



3. Remove from the pan and drain on kitchen paper.
